摘 要: | 古井贡酒制作技艺在传承的历程中经历了几个技术阶段:原始的发酵酒"九酝春酒"制作技艺;明代"老五甑"蒸馏酒制作技艺,现代微生物技术应用产生的白酒勾兑技艺。每次技术革新都有一定的社会原因,决定古井贡酒制作技艺革新的社会因素主要有经济发展要求、文化因素和科学技术系统的成熟度。
