康乃馨红色素理化性质的研究

摘    要:对康乃馨红色素的理化性质进行了详细的研究 ,结果表明 ,该色素水溶性好 ,耐热性好 ,而光照对色素有一定的降解作用。还原剂、盐、蔗糖、金属离子 (除Fe3 +外 ) ,对色素的色泽无不良影响 ,柠檬酸有增色效应。

Abstract:This paper has discussed physical and chemical prope rties of carnation red pigment.The result shows that the pigment is very soluble and heatproof, while sunshine has some degradation effect on it. And reducing agent, salts, cane sugar and men tal ions (besides Fe 3+ ions) have no good effects on color and lust of the pigment. But citric acid has some effect on increasing it.
