论宋代食品贮存加工的方法与特色

摘    要:食品贮存加工是中国饮食文化和中国科技发展的重要内容,宋代的食品贮存加工大体可分为保鲜贮存加工与干制贮存加工两大技术类型。宋代保鲜贮存的方法有:窖藏法、冷藏法、密封法、混放法、灰藏法等,保鲜贮存多应用于粮食与果蔬食品;而宋代食品的干制贮存,根据不同的方法与特色,可分为:干燥法、腌制法、糟制法和糖制法。宋人在腌制食品的过程中能够结合加热和日晒等方法,使腌制贮存效果达到最佳。
