运用红外光谱法和主成分分析法建立洋槐蜜的指纹图谱,并与其他9种蜂蜜的红外指纹图谱进行鉴别比较。通过分析10种蜂蜜的红外指纹图谱,并结合主成分分析法,发现10种不同的蜂蜜在主成分一、主成分二、主成分三的二维散点图和三维散点图上的点都较为分散,10种不同的蜂蜜在化学成分上存在一定的差异。通过分析洋槐原蜜和市售洋槐蜜的红外指纹图谱,并结合聚类分析法,发现只有1种洋槐蜜原蜜,能被归为加工的洋槐蜜。该方法可将洋槐蜜原蜜和加工后的洋槐蜜较好地区分开。
