鹅肝酱是一种源于法国的著名美食,由于饲养与鹅种的差异,我国普通鹅肝与法国鹅肥肝在营养成分上存在差别,导致鹅肝酱的口感和风味降低。实验利用皖西白鹅鹅肝为主要原料,通过质构仪检测不同脂肪添加量和煮制条件下的鹅肝酱的硬度、咀嚼性、弹性、粘着性。最终结合两者的结果,得出利用本土鹅种的普通鹅肝加工生产鹅肝酱时,按质量比2∶1添加猪肥膘肉,同时以85℃煮制3.5h可得到鹅肝酱最佳物理特性。该研究对促进我国本土鹅产业发展有一定的参考价值。  相似文献

啤酒是世界上产量最大、酒精含量最低、营养较为丰富的酒种.啤酒的质量指标包括感官指标、理化指标、卫生指标.尽管有许多理化评价指标,但远远不能全面评价其外观特征、口感及风味特性.在评价啤酒质量时,感官评价仍然占有很重要的位置.本文探讨了影响啤酒感官评定的诸多因素,减少了主观因素与客观因素对评定员的影响,提高感官评定的准确性.  相似文献

为建立快速诊断小鹅瘟的PCR方法,根据已发表的GPV主要结构蛋白VP3基因序列,经多序列比对和Oligo6.0软件分析设计特异性PCR引物。以微量法提取病鹅肝组织DNA,优化PCR反应引物退火温度、循环次数和鉴定其特异性,并与酚氯仿法和煮沸法进行同步对比研究。结果显示,建立的PCR检测方法能够特异性检测病鹅肝组织中GPV的核酸,其扩增片段大小为343bp,最佳退火温度为58℃,最佳循环次数为35次。微量法提取的病毒核酸PCR检测灵敏度分别是酚氯仿法的50倍和煮沸法的2500倍。该PCR检测方法不与鹅副黏病毒、禽流感病毒、传染性支气管炎病毒、鸭瘟病毒以及健康鹅肝组织发生交叉反应。本研究建立的GPVPCR检测方法能够快速诊断小鹅瘟。  相似文献

为探究鸡腿烤制的最优工艺参数,选取微波烤制时间、光波烤制时间、加湿烤制时间3个因素进行单因素实验.在此基础上,采用响应面实验法进行实验设计,从烤制鸡腿的色泽、香味、滋味、质感4个维度进行感官评价,并使用模糊数学方法,降低感官评价的主观性,从而得出更加科学严谨的结论.结果表明:当微波烤制时间5.5 min,光波烤制时间8.5 min,加湿烤制时间6 min时,烤制出的鸡腿色泽金黄、鲜嫩多汁,感官评分85.56分,评分最高.  相似文献

本研究将红葡萄酒添加到面包原料中,通过控制发酵面包原料配比参数研制带有酒香的面包,色泽鲜亮好看、风味独特,具有广阔的发展前景和经济效益。以感官评价为指标,通过单因素试验和正交试验得出酒香面包的最佳生产配方。结果表明酒香面包的最佳配方是:每100g面粉中加入白砂糖12g,红葡萄酒5g,酵母1.8g,改良剂1.0g。  相似文献

The aims of the study were: to identify the number of SENCOs who have received specific training on sensory integration. To determine the understanding of the eight senses and sensory integration theory and sensory strategies. Determine any common gaps in knowledge or misconceptions. Fifty-five surveys were completed. 40% of respondents had received training on sensory processing. There was a significant chi-squared correlation between those that had received training and those that stated they did not know or made guesses about what the vestibular and proprioceptive senses are important for. There was a correlation between those that had received training and those that had good knowledge of the signs of sensory hyper-responsivity. There was no statistical significance of increased knowledge on sensory hypo-responsivity between those who had and had not received training. SENCOs who rated their school as being sensory-friendly had a greater understanding of what sensory integration is important for. Pertinently, those who rated their school as being ‘sensory-friendly’ (45.5%) were 8.5 times more likely to know sensory integration is needed for self-regulation. A number of recommendations are made including the need for greater collaboration between therapists and teachers to increase understanding of sensory integration and the impact of this on a child's education and wellbeing at school. Sensory strategy programmes are to be written with teaching staff and not given by the therapist in an ‘expert’ role. Sensory integration awareness training, including why and how to utilise sensory strategies, is to be encompassed in the SENCO national qualification.  相似文献

There have been many efforts to conceptualise literacy, both in terms of its essence and component parts, but it has proved difficult to define. This paper considers work that is undertaken with children and older learners with sensory needs in order to promote the early stages of literacy. Recent government initiatives aimed at fostering literacy development have caused teachers of children with sensory needs to re-examine their practice. The paper discusses early literacy as part of children's attempts to communicate and describes children with sensory needs engaging in a range of activities that are termed 'literacy' by those working with them. By taking into account these activities, the authors endeavour to throw light on the broader questions around concepts of literacy.  相似文献

本文系作者于1992年春末夏初对济南市郊直翅目昆虫群落进行调查研究的结果。讨论了直翅目昆虫成体及幼体与其选栖生境、生态习性(湿度)之间的关系及各个种的相对数量级。结果表明:春末夏初济南市郊直翅目昆虫计26种,分隶于2亚目,5总科,11科。其中以成体越冬计3种,多数种类以卵越冬,计23种;不同生境中同种直翅目昆虫幼体发育速度不一致,在济南市郊内表现为不同龄期的同一种类可同时捕到,共计8种其数量级为“极多”或“多”,可视为济南市部优势种,对其中能够侵入农田的大中型植食性种应进行必要的预报和防治。  相似文献

调查赣州市章贡区829名3-6岁幼儿感觉统合失调率及分布情况,为探讨幼儿感觉统合失调的原因提供一定的线索.方法:采用感觉统合能力发展问卷,对章贡区8所公、私立幼儿园幼儿进行问卷调查.829名3-6岁幼儿的轻度感觉统合失调率为12.69%,重度感觉统合失调率为4.08%,轻重度感觉统合失调率为16.77%.男孩和女孩感觉统合失调率分别为17.47%、15.91%.各项轻度和重度感觉统合失调率的年龄和性别分布无显著性差异.在3-6岁幼儿中感觉统合能力发展存在一定的问题,应引起幼儿园和家长的重视,最好进行早期干预,可全面促进幼儿感觉统合能力的改善.  相似文献

在整个钢琴弹奏的过程之中,人的触觉、听觉和视觉三个感觉系统及其三系统之间都存在着特定而普遍的联系,这种联系对钢琴弹奏系统的整体结构和整体功能的优化有着积极作用,可以有效促进整个弹奏系统的完善与提高。文章采用文献法、归纳演绎法为钢琴弹奏过程中各感官的协调策略提供理论依据,利于提高钢琴弹奏过程中各感官的配合与协调,从而优化钢琴弹奏系统的整体功能,为提高钢琴学习效率和弹奏水平建言献策。  相似文献
