松仁蛋白饮料的制作及试验分析   总被引:2,自引:0,他引:2  
以松仁为主要原料,研制出一种营养丰富、具有保健功能的蛋白饮料.由于松仁中含有油脂,制成的饮料容易分层,所以选择合适稳定剂是关键问题.通过实验研究,确定饮料最佳配方为:糖浓度5%,黄原胶0.15%,羧甲基纤维素钠0.2%,蔗糖脂肪酸酯0.2%.松仁饮料在80-85℃,pH7.0~7.2,40Mpa均质两次,松仁蛋白饮料产品具有较好的稳定性.  相似文献

以甘蓝为原料。经打浆、调配、均质、脱气、灌装、杀菌研制出具有甘蓝风味和营养的蔬菜汁饮料。结果表明.采用pH值5.0—5.5左右90℃300ppm的乙酸铜溶液热烫2—3min的工艺护色效果最佳,饮料最佳配方为甘蓝汁原液质量浓度为75%、加糖量为9%、乳酸量为0.4%。加入0.15%复配胶(CMC—Na和明胶1:1混合)的甘蓝汁饮料稳定性最好。经热灌装二次杀菌制成成品饮料色泽鲜绿,不透明,汁液均匀一致,味道酸甜清新可口。  相似文献

以黄粉虫幼虫粉为原料,采用胰蛋白酶水解的方法,对原料中的蛋白质进行水解,对影响酶解反应的因素进行了选择和分析。适宜的反应条件为:黄粉虫与水的重量比为20:60,酶作用量为黄粉虫粉重的0.5%,控制反应温度50℃,酶解时间8h,pH值为8.0。在此基础上,针对水解液有异味和缺乏Vc的问题,进行了水解液与果汁调配试验。结果表明:水解液与果汁按1:1比例,添加饮料重量的6%蔗糖,0.2%黄原胶,0.3%CMC-Na,最终制得一种含果汁的复合氨基酸饮料。  相似文献

通过对提高花生牛奶稳定性的主要影响因素的稳定剂配方、均质工艺、杀菌后的冷却方式进行试验研究。结果表明,单一的瓜尔豆胶、卡拉胶、黄原胶、CMC增稠稳定剂对花生牛奶饮料的稳定效果差;卡拉胶:瓜尔豆胶为50%:50%的复合增稠稳定剂对花生牛奶饮料有较好的稳定效果;卡拉胶、瓜尔豆胶、蔗糖脂肪酸酯用量分别为0.08%、0.08%、0.10%的增稠稳定剂与乳化剂复合的配方可大大提高花生牛奶饮料的整体稳定性;花生牛奶饮料的均质工艺以25Mpa压力采用两遍均质的方法效果较好;杀菌后以急速冷却方式可大大增加花生牛奶饮料的稳定性。  相似文献

以核桃仁辅以牛奶为主要原料制成的核桃乳饮料,研究了添加剂对核桃乳稳定性的效果,结果表明:复合稳定剂具有最佳的稳定效果,其最佳配方为0.3%的CMC—Na、0.1%的PGA、0.1%的卡拉胶、0.2%的黄原胶,且加入0.2%的螯合剂柠檬酸三钠和0.1%的乳化剂SE对产品的稳定具有促进作用.  相似文献

以红枣、苦荞茶为主要原料,研制出一种集营养、保健为一体的复合型茶饮料,提高苦荞茶的利用率,丰富茶饮料产品类型。以红枣汁、苦荞茶汁、绵白糖、柠檬酸的添加量作为影响饮料感官特性的四大因素进行单因素试验,再通过正交试验确定复合饮料的最佳工艺配方。结果表明:红枣汁30mL、苦荞茶汁70mL、绵白糖7g、柠檬酸0.15g、β-环状糊精0.5g时,复合饮料色泽风味最佳,组织状态均匀无沉淀,透明度高,稳定性好,具有成熟红枣和苦荞茶特有的香气和风味。产品的总糖含量≥9%,总酸(以柠檬酸计)为0.02%-0.10%,无异味.酸甜可口。  相似文献

使用咔唑硫酸比色法测定皖南山区豆腐柴叶中果胶的含量,得到符合试验方法的最佳测定条件:测定果胶含量所需的浓硫酸用量为10.0ml,水解温度为85℃,水解时间为25rain,0.15%咔唑无水乙醇溶液用量为0.8ml,提取的果胶含量为37.8%,半乳糖醛酸的标准曲线方程为A=0.0043C+0.104,回收率在98.6%-103.4%,相对标准偏差为1.529%.本法操作简单,稳定性好.用于实际样品测定时,效果较为满意.  相似文献

以蛋白质提取率为主要指标,对花粉的发酵破壁提取和酶法破壁提取进行了研究.实验表明,当花粉加2.5倍水过胶体磨细化后,采用酶法提取工艺,在温度为45℃,pH为4.6的条件下,酶解30h,然后在60℃下浸泡10h,蛋白质提取率最高,效果最好.通过对花粉运动休闲饮料的调配试验,当花粉母液为20%、氯化钠为2%、蛋白糖为0.04%、柠檬酸为0.1%时,饮料的品质最佳.  相似文献

目的:建立HPLC法测定川滇桤木中绿原酸的含量。方法:采用高效液相色谱法,VenusilXBP-C.。色谱柱(150mm×4.6mm,5μm),流动相为乙腈-0.4%磷酸溶液(8:92),流速为1.0mL/min,检测波长为324nm,柱温25℃。结果:绿原酸在0.1088μg-1.088μg范围内线性关系良好,r=0.9999,平均加样回收率为98.98%,RSD=0.77%(n=6)。结论:本法操作简便、快速、稳定性高、重现性好,可用于川滇桤木中绿原酸含量的测定。  相似文献

During interview with English majors, it was found that a majority of students expressed disappointment with their experience of English literature classes. Students' dislike of learning English literature appears to be the major problem of teaching English literature in China. Reader response approach is a good way to solve this problem. In this paper, I explain the rationale behind the reader response approach, such as its origin, definition, features, assumptions, and strategies. Then I illustrate how reader response approach works as a teaching strategy by presenting several teaching models.
