瓜叶菊花红色素的性质与稳定性的研究

研究瓜叶菊花红色素的理化性质和光、温度、食品添加剂、氧化剂和还原剂、金属离子等对色素稳定性的影响.结果表明:该色素对光与80℃以下温度较稳定,氧化剂,Cu2 、Sn2 等对色素液的吸光度有明显的影响,Al3 、Ca2 等对色素液有一定的护色作用.而在食品添加剂中蔗糖能显著提高色素的稳定性,维生素C有明显降色效应.

报道了栀子中黄色素的提取方法，以及光照、温度、PH值和金属离子对栀子黄色素的影响，发现该色素在440nm处有强吸收峰，在碱性和中性条件下，对光、热、金属离子稳定性好，Fe^2 、Sn^2 对色素有较大影响。     

光照、温度对亮蓝色素稳定性影响的研究

研究了光照、温度及酸度等因素对食用合成色素亮蓝稳定性的影响.研究表明:亮蓝色素的酸稳定性较好,在pH=2～9的范围内能稳定保存;耐热性较好,温度对其稳定性基本没有影响;暗处放置有利于色素的保存;金属离子K 、Na 、Mg2 、Al3 、Mg2 、Zn2 与其共存,稳定性较好;Fe3 和Cu2 的加入,会使亮蓝色素溶液变色,生成难溶物;食品中只能添加微量的Fe3 、Cu2 .     

“Our Leaders Are Us”: Youth Activism in Social Movements Project

In this article, we describe the development and implementation of a project, “Our Leaders Are Us: Youth Activism in Social Movements”, that we undertook with New York City high school students exploring events leading up to and following the Supreme Court’s landmark decision in Brown. As part of a 50th anniversary celebration of the Brown decision, we designed a series of three workshops that sought to extend urban students’ knowledge of Brown, segregation, and activism and to examine the roles of young people in critical civil rights campaigns. In addition, we discussed with students the ways in which young people can be involved in contemporary social movements and the strategies they can use to effect what they perceive to be needed changes in their lives. Along with the researchers’ extensive field notes, the participating students completed questionnaires throughout the project so that their understanding of Brown and related issues could be documented. Using our findings, we suggest ways that educators can develop and implement similar programs for use in schools.

Do Black Lives Matter?

This study employs content analysis to examine how the New York Times and St. Louis Post-Dispatch framed “Black Lives Matter” protests in the aftermath of the shooting of unarmed black teenager Michael Brown. The researchers examine all New York Times and St. Louis Post-Dispatch articles dealing centrally with the Michel Brown protests during three separate time periods corresponding to heavy protest activity. The coding scheme measured dominant frame direction, article length, sourcing, and mention of protester crimes. Contrary to expectations, the papers provided overwhelmingly sympathetic coverage of “Black Lives Matter” protests. In describing the protests, both newspapers were much more likely to employ a “positive” frame suggesting peacefulness and order than a “negative” frame suggesting lawlessness and deviance. Neither newspaper over-emphasized protester-perpetrated crimes, with both papers making relatively infrequent mention of looting, arson, assault, and gunfire, respectively. Importantly, both newspapers directly quoted protesters much more often than they quoted police officers and other government officials.

美国作家霍桑《小伙子布朗》中主要人物布朗的悲惨命运折射出僵化的清教教规及偏执的清教意识摧残人性、表里不一的本质。作家回归自然、讴歌纯朴真诚的创作主题则表明虚伪的宗教只能将人带入困惑迷茫的深渊，毁灭人性；只有热爱生活，理解人生的真谛，才能找到生命的归依之路。     

地肤叶绿色素的提取及其稳定性研究

文章研究了地肤叶绿色素的最佳提取条件、基本性质及其稳定性。结果表明:以90%的乙醇为提取剂,料液比(g︰mL)在1︰50,于50～60℃下浸提24h效果最好。该色素易溶于丙酮、乙醇和碱溶液,对光、热、氧化剂、还原剂和大部分金属离子都比较稳定。
