水溶性膳食纤维添加到低热能焙烤食品中,会对产品的质构产生影响,从而直接影响到产品的膨松性.本文分别添加明胶、阿拉伯胶、羧甲基纤维素钠(CMC-Na)和黄原胶四种水溶性膳食纤维到低热能蛋糕中,研究其对低热能蛋糕膨松性的影响.实验结果表明:明胶和阿拉伯胶添加量在15%以内、CMC-Na添加量在6%以内对产品膨松性有明显的改善作用,黄原胶对产品体积影响不大,但能明显提高其含水量和改善产品口感. 相似文献

This study investigated word identification inArabic and basic cognitive processes inreading-disabled (RD) and normal readers of thesame chronological age, and in younger normalreaders at the same reading level. The studyfocused on the word identification processes ofphonological decoding and orthographicprocessing and the cognitive processes ofsyntactic and morphological awareness, workingmemory, and visual processing. RD children werecompared with normal readers on a battery oftests developed in Arabic on the basis of thoseavailable in English and Hebrew. The presentresults revealed deficiencies among the RD childrenin phonological decoding, in contrast torelative strengths in orthographic processing. These data were consistent with English-languagefindings. The analysis of basiccognitive processes indicated significantdeficiencies in morphology, working memory, andsyntactic and visual processing, with the mostsevere deficiencies observed for phonologicalawareness. Despite advancements in empirical studies of developmental dyslexia, progress on methods of dyslexia assessment have been hampered by ongoing debate concerning diverse issues such as the role and validity of IQ in the assessment process, labelling and definitions ( Miles, 1994 ; Stanovich, 1991, 1992 ). With the emergence of cross-linguistic studies of dyslexia came the realisation that the manifestation of dyslexia is different in different languages ( Goulandris, 2003 ; Smythe, Everatt & Salter, 2004 ). It follows that the assessment of dyslexia should consider specific linguistic features of the language spoken by the individual to be assessed. This paper argues for the need of culture-fair assessment and calls for considerations to be given when assessing monolingual Arabic-speaking individuals with dyslexia which would take into account the specific linguistic feature of the Arabic language. 相似文献

This paper presents a study focusing on differences in Israeli Jewish and Arab chemistry teachers’ beliefs regarding teaching and learning of chemistry in the upper secondary schools. Israel is a country experiencing the problems of diverse cultural orientation of its inhabitants but applying the same educational system to its diverse cultural sectors. Education includes the same curriculum in chemistry for both the Israeli Jewish and Arab cultural sectors as well as final examinations (matriculation) set centrally by the Ministry of Education. Thus, this study can serve as a striking case for other countries facing similar cultural diversity. The study is based on two different instruments that are both qualitative and quantitative in nature. The qualitative data stem from chemistry teachers’ drawings of themselves as teachers in a typical classroom situation accompanied by four open questions. The data analysis follows three qualitative scales: beliefs about classroom organization, beliefs about teaching objectives and epistemological beliefs. A quantitative study gives insights into teachers’ beliefs about what characterizes good education. The main goal of the present paper is to determine whether both groups of chemistry teachers with different sociocultural background in Israel hold different views about education in general and chemistry education in particular. The findings provide evidence that in Israeli chemistry classrooms, the beliefs of Arabic teachers differ from those of the Jewish teachers, although both groups live in the same country and operate the same educational system. 相似文献

This paper investigates the relationship between phonological processing and reading ability amongst grade 4 and grade 5 Arabic
speaking children in Egypt. In addition to measuring reading level, the study assessed the children’s ability to identify
rhymes, delete individual phonemes from words, retain and manipulate sequences of digit names and rapidly access verbal labels.
Further literacy and literacy-related tasks required children to decode novel letter strings, to distinguish similar words,
to identify words within letter chains and to correctly spell dictated text. A non-verbal ability measure was also included
to allow comparisons to be made between a group of poor readers with good non-verbal skills (dyslexics) with a control group
of chronological-age-matched normal readers with equivalent average scores on the non-verbal task. Results indicated relationships
between literacy ability, decoding and phonological processing within this cohort, as well as identifying differences between
dyslexic and control groups that suggest Arabic dyslexics show signs of poor phonological skills. The study supports the view
that Arabic dyslexic children have impairments in the phonological processing domain. 相似文献
