重金属及农药在孝感市食品及人体中蓄积的研究

从2000年至2003年对孝感市外环境、食品、人体生物材料共380份样品进行了重金属及六六六(BHC)、滴滴涕(DDT)蓄积量检测和分析．结果为食品中砷、铅、镉等重金属检出量在国家标准以内．菜地土残留量最高，其次是农田土、丘陵土、地表水、浅井水和深井水；食品样中，豆类、植物、油、鲜鱼、农药检出率达100%，人脂、血液中BHC检出率分别是93．33%和100%，DDT分别是100%和86．67%，人脂中BHC和DDT检出量最高达187．67μg／kg和298．47μg／kg；结果表明孝感市外环境中BHC残留量超过了绿色食品灌溉用水标准和生活饮用水卫生标准，农产品检出率为95%；提示孝感市应加大对农业环境的保护力度，严禁滥用有机氯农药，科学使用有机磷农药，对农产品基地应采取综合措施进行农药降解，以实现从土地到餐桌的食品安全．     

更新职工饮食营养观念 帮助大学生提高健康素质

社会的发展和生活经济条件提高的同时,当代大学生在饮食消费行为上也出现了一些不良的问题,导致身体健康水平下降等。这些现象虽引起有关专家和教育行政部门的关注,但是并没有引起从事饮食服务的职工和当代大学生的重视。目前解决这一问题的方法是更新高校饮食从业人员的健康营养观念,加强对大学生的营养教育,实行营养配餐,使大学生树立科学合理饮食的意识,养成良好的饮食习惯。     

2013绍兴·亚洲食学论坛会议综述

第三届亚洲食学论坛的会议文集一共收录了16国学者的78篇食学论文,内容涉及食学理论与评述、饮食安全与健康、食物历史与传承、世界饮食与交流、饮食遗产与观光等五大类。通过对文集内文章的评述,可以看出其饮食资讯多样化、健康理念普世性、学术回顾批判性、研究取径多角度的特点。     

Nutritional intake of elite football referees

Abstract

There is a paucity of dietary data in football referees. In this study, 23 elite main and assistant referees (34.4 ± 5.6 years) completed a 7-day dietary record during the competitive season. No nutritional intake differences were observed between main and assistant referees. Referees’ mean daily energy intake (DEI) was 2819 ± 279 kcal. The intake of proteins (1.7 ± 0.2 g · kg^?1), carbohydrates (4.1 ± 0.8 g · kg^?1) and fats (1.4 ± 0.2 g · kg^?1) represented, respectively, 18.4 ± 1.5%, 44.4 ± 4.4% and 34.6 ± 4.1% of the DEI. Carbohydrate intakes before, during and after exercise were 66 ± 42, 7 ± 15 and 120 ± 62 g. Daily carbohydrate, fibre, polyunsaturated fat and water intakes were below recommendations, while fat, saturated fat, cholesterol and sodium intakes were above recommended values. The prevalence of inadequate intake was high for vitamin E (96%), folate (74%), vitamin A (61%), vitamin C (39%), magnesium (26%) and calcium (22%). Carbohydrate intake before, during and after exercise were far from achieving the minimum recommended values. Most referees demonstrated a negligent behaviour of hydration during exercise. Referees would benefit from dietary education in order to optimise performance and health.     

非饮食干预条件下耐力运动对单纯性肥胖儿童血压、血脂的影响

对19名单纯性肥胖儿童及20名正常健康少年儿童进行了血压、血脂(TC:用酶反应试剂药盒测定,TG:乙酰丙酮微量测定法)检测,并对19名单纯性肥胖儿童进行了8周的耐力训练(训练中未对受试者提出低盐、低脂的饮食要求).结果表明:单纯性肥胖儿童血压明显高于正常儿童,血脂代谢紊乱.非饮食干预条件下的耐力训练后,肥胖儿童血清中TG含量下降,HDL-C显著上升,血脂代谢紊乱得到缓解,同时血压有明显下降.且从众多因素的分析中,我们发现,TG与SBP( r=0.32) 、DBP(r=0.22)呈正相关,而ApoAI与SBP( r=-0.19) 、DBP(r=-0.20)呈负相关,提示单纯性肥胖儿童的高血压与其血脂代谢紊乱有关.非饮食干预条件下的耐力训练有助于降低肥胖儿童的血压、血脂.     

畜产食品行业大学生就业现状及对策分析--以蚌埠学院生物与食品工程系为例

本文主要分析蚌埠学院食品专业大学生畜产食品就业情况,并在此基础上指出当前畜产食品行业就业现状、存在问题和矛盾以及相应的对策。     

安阳市农村食品安全管理盲区与加强监管的几点建议

安阳市小城镇及农村地区的食品安全问题是我市建设社会主义新农村的重要方面。但当前我市农村食品安全还存在管理盲区和隐患。要结合安阳实际,引导我市农村消费者提高安全意识,有计划、分层次地建立食品安全保障监控网络,建立农村食品的安全信息网络,推行农村食品加工、经营等方面诚信承诺机制,加强对群体聚餐食品安全的引导和监测,杜绝劣质食品的市场需求,有效保护农民群众身体健康。     

Diet and Pregnancy: Health-Care Providers and Patient Behaviors

In this study, associations between health-care providers (HCPs) discussing diet with their pregnant patients and patient dietary behavior were assessed in addition to factors related to HCPs discussing diet with their patients. Questionnaires were completed by 237 pregnant women and 31 HCPs at 12 obstetrics–gynecology clinics across the United States. Patients provided versus those not provided dietary counseling by their HCP were more likely (OR = 2.17, 95%; CI = 0.75–6.25) to engage in healthy dietary practices. HCPs that discussed multiple health behaviors were nearly four times more likely to discuss diet with their pregnant patients compared with HCP who did not discuss other health behaviors (OR = 3.67, 95%; CI = 1.10–12.28). This study indicates that HCP education can positively impact dietary behaviors of their pregnant patients.

Talking about the Difference between Chinese and Western Rite in Food and Cloth

In recent days,with more and more frequent exchanges and communications between China and western countries,their different culture,including different rites is involved in each other.Some people think that western things are definitely much better than Chinese things,so they imitate them from every aspect.It is not good for them to do so because some western things fit for westerners more than for Chinese people.This paper endeavors to illustrate that Chinese people should properly absorb western culture through briefly introducing food and cloth culture in China and Western countries.
