| 摘 要： | 本文在阐述了水活性和渗透压理论的基础上,揭示了这些理论与粮谷及各类食品运输安全条件的关系。笔者出提船舶运输此类货物时,如何应用水活性和渗透压理论去指导运输实践的问题。而这对确保粮谷及各类食品的完整无损,防止其在储运中发生腐败霉烂变质是有重要意义的。
