外界因素对刺梨中SOD活性的影响

摘    要:刺梨中的SOD活性在40-60℃的温度下比较稳定,酶活力至少保存60%;SOD活性在PH值6-8左右时相对稳定,PH>8.0或PH<6.0后酶活力迅速丧失;高浓度的Cn2+和Zn2+对SOD活性有抑制作用,2-6mmol/L的Zn2+对SOD活性有稳定效果,SOD保存在表面活性剂吐温—20中较好.

Abstract:The temperature SOD activity in barbed pear was steady and retained 60% at lest was 40-60℃ .The PH that SOD ectivity was relatitely steady was about 6-8, PH> 8 or PH<6, SOD activity was lost xapidy.High concentration Cu2+ and Zn2+ restrain SOD activity, The concentration that can steady SOD activity was 2-6 m mol/L That SOD was retained in Tween-20 solution was better.
