杏鲍菇子实体与深层发酵菌丝体营养成分分析

摘    要:对杏鲍菇子实体和深层发酵菌丝体中的蛋白质、粘多糖、微量元素等营养成分测定表明,杏鲍菇子实体和深层发酵菌丝体中的蛋白质及微量元素含量相近,菌丝体中未有重金属As,子实体中重金属含量也均低于国家标准,深层发酵菌丝体中多糖含量是子实体的1.88倍,因而,杏鲍菇深层发酵菌丝体可以替代子实体作为保健食品深度开发的原料。

Abstract:The analysis and comparison of crude polysaccharides and protein as well as trace elements in the fruitbodies and submerged cultivated mycelia of Pleurotus eryngii showed that the protein content and trace elements in the fruitbodies and submerged cultivated mycelia are almost the same.There is no heavy metal As in the mycelia and the content of heavy metal in fruitbodies is also lower than national standard.At the same time,the content of the polysaccharides in submerged cultivated mycelia is 1.88 times than that in fruitbodies.Therefore,the submerged cultivated mycelia of Pleurotus eryngii could be substituted for fruitbodies as raw materials of deepgoing development of health food.
