| Abstract: | The prosperity of the catering industry in Kaifeng,the capital of the North Song Dynasty,is mainly reflected in the following aspects:the large numbers of taverns and restaurants,concrete division of labor,a great variety of food and various occupants,etc.Such a booming phase was brought about for such reasons as the large social demand and the opening policies,and so on. |
