摘    要:黑米是我国近年来一种流行的保健食品,其富含的营养成分(维生素,矿物质和色素等)主要集中于黑米皮。本文综述了黑米皮的多种营养学功能,以及在抗心血管疾病方面的特殊疗效,探讨了其提高运动能力的生物学机制,并对其作为运动营养补品的发展前景给予展望。

Abstract:Black rice is becoming more and more popular in health food in China recent years, which contains rich nutrition such as vitamin, minerals, and pigment, etc., mainly concentrated in the black rice out-layer fraction (BRF). In this article, we summarized variety nutritional functions of BRF, as well as its special effection on preventing vascular disease; and probed not only its biological mechanism of raising the athletes' sports ability, but also its developing trends of becoming sports nutritional tonics.
