磁场对有机溶剂中脂肪酶催化活性的影响

摘    要:研究了磁场对有机溶剂中脂肪酶催化活性的影响。磁化溶剂、底物溶液、均能影响脂肪酶的酯合成活力,磁化溶剂对脂肪酶的酯合成活力影响最大0.216T的磁场可使酶的酯合成活力由24.8nm ol/m in.m gPr提高到39.7nm ol/m in.m gPr.水活度较低时,磁场对酶的酯合成活力影响较小,但酶的催化活性较高,随水活度增大,酶的酯合成活力减小,但磁场的影响增大,当水活度增达到0.86时,磁场可使酶的酯合成活力成倍增加。0.09T、0.475T的磁场使酶的最佳水活度aw值减小为0.31,磁场显著影响脂肪酶催化酯合成反应的初速度。

Abstract:This text studies the effects of magnetic field on the catalytic activity of lipase in organic menstruum. Both magnetic menstruum and substrate solution can affect the esterifiable synthesization activity in lipase, in which the most powerful effects are made by the magnetic menstruum. The magnetic field of 0.216T can make the esterifiable sythesization activity of enzyme increase from 24.8nmol/min.mgPr to 39.7nmol/min.mg-Pr.If the water activity is lower, the effects of the magnetic field are smaller, while the catalytic activity of enzyme is higher. With the increase of the water activity, the esterifiable synthesization activity of enzyme is decreasing and the effects of the magnetic field are increasing. When the water activity increases to 0.86, the magnetic field makes the esterifiable synthesization activity doubly increase. The magnetic field of 0.09T and 0.475T make the best water activity aw decrease to 0.31. The magnetic field remarkably influences the primary speed of esterifiable synthesization reaction catalyzed by lipase.
