柠檬酸、苹果酸钙的制备与应用研究

摘    要:柠檬酸苹果酸钙(CCM)是一种新型钙营养强化剂。本文研究了CCM的制备和应用技术问题,在制备实验中以溶解性为指标,通过L_9(3~4)正交实验优化了制备CCM的最佳参数,即在40oC条件下Ca;C_A:Ma=12:6:9(摩尔比)为最佳,同时对CCM的性质及CCM苹果汁的工艺技术问题进行了初步研究。结果表明,在苹果汁中添加0.06%-0.12%的CCM,要比以添加相同剂量的醋酸钙作为钙强化剂优越得多。

Abstract:Calcium citrate maltrate (CCM) is a new calcium supplement. The primary studies were compheted on the preparation and application of CCM in this paper. An oprtimum parameter for preparaing CCM was optimized by means of L934 experimeter, considering the solubility of CCM as index i.e. Calcium hydroxide : Citric acid : Malic acid = 12:6:9 (on mole basis) in temperature 40. C Meanwhile the basic properties of CCM and the technologic problem CCM apple juice were studied in the experiment. The results should that supplement 0.06 0.12% CCM were more beter than the same dose acetate calcium in apple juice.
