| 摘 要： | 茶叶多糖是一种复合杂多糖，它具有防辐射、防治心血管疾病，降血糖、降血脂、降血压，抗癌、抗凝血、抗血栓、抗动脉粥样硬化及增强机体免疫力等功能。所以它可作为功能保健食品用于糖尿病人、心脑血管病人的辅助治疗。本文在茶叶多糖的提取中通过对预处理的方法、提取温度、茶叶的老嫩、Sevag除蛋白试剂与提取液的比等因素的改变，探讨了茶叶多糖的最佳提取条件。
