四棱豆与大豆营养成份的比较分析

摘    要:本文对四棱豆与大豆的一些营养成份进行了分析比较。测试结果:四棱豆的蛋白质、脂肪、总糖的含量接近于大豆,而微量元素(Zn、Mn、Se、As)和必需氨基酸(蛋氨酸、色氨酸、赖氨酸等)的含量比大豆丰富。


THE COMPARISON OF NUTRIENT COMPOSITION BETWEEN WINGED BEAN AND SOYBEAN
Abstract:The nutrient composition of winged bean and soybean seeds has been determined. The main results are summarized as follows:1 . The winged bean drv seeds contained about 39.6% protein, 16. 9% crude lipid and 22.8% carbohydrate, and the soybean dry seeds contained about 41. 2% protein, 17.3% crude lipid and 26.8% carbohydrate. Winged bean was similar to soybean in the contents of protein, crude lipid and carbohydrate.2 . The contents of microelements(Zn, Mn, Se, As)and essential amino acids (methionine, tryptophan, lysine, etc. )in winged bean weuc richer that in soybean.
