云南黄素馨色素的提取及稳定性研究

摘    要:对云南黄素馨色素的提取及稳定性进行研究。结果表明 ,该色素水溶性好 ,对光、热有一定的耐受性 ,对NaCl、FeCl3 蔗糖 ,柠檬酸等添加剂影响不明显 ,且云南黄素馨资源丰富 ,在食品工业中有一定的开发利用价值。

Abstract:The extraction and stability of yellow pigment from Jasminum mesnyi were studied. Results show that the pigment is water-soluble. It has definite light and heat resisting properties.It has few influence on it when sodinm chloride, ferric chloride, sugar or (and) citric acid was (were) added into the pigment solution. Jasminum mesnyi is rich in natural resources, and the extraction technique is easy to master. So it is worthwhile exploiting and make use of in food industry.
