柱状蔬菜冷藏运输前真空预冷热质迁移数学模型及实验

摘    要:为提高冷藏品质、延长货架期,对柱状蔬菜白菜在冷藏集装箱运输前的真空预冷技术进行研究,建立热质迁移数学模型,用实验方法对该数学模型加以验证.在设定真空压力状况下,分别对模拟和实验中的真空室内压力变化、白菜自身温度变化、真空室内相对湿度变化以及白菜质量损失等情况进行分析和对比.结果表明,模拟与实验的结果数据接近,该模型可对果蔬的冷藏集装箱运输和柱状蔬菜真空预冷的理论研究提供参考.

Abstract:To improve the cold storage quality and prolong the shelf life, the vacuum cooling technology of column vegetable cabbage is studied before reefer container transportation. The heat and mass transfer mathematical model is built, and the model is verified by the experimental method. In the case of setting vacuum pressure, the pressure change in vacuum chamber, the temperature variation of cabbage, the relative humidity change in vacuum chamber and the cabbage mass loss in simulation and experiment are analyzed and contrasted respectively. The result shows that the data of simulation are close to that of experiment and the model has reference value for theoretical research of reefer container transportation and column vegetable vacuum cooling.
