| 摘 要： | 通过研究大米淀粉的酶解条件,比较了Seavg法和盐析法这两种除蛋白方式对测定大米淀粉含量的影响,并用旋光法测定了大米淀粉含量,得到了一种快速、经济、结果重现性好的测定大米淀粉含量的方法。

| Abstract: | In this paper,we explored the enzymatic hydrolysis conditions of rice starch and compared the effect of two kinds of deproteinization method：Seavg method and salting out method on the determination of rice starch.We also determined the content of starch of rice by polarimetry.Ultimately,a rapid,low-price,high reproducible method was obtained to determine the content of starch of rice. |
