摘    要:川菜大厨把创新用在菜肴滋味的研发上,通过巧用麻辣,烹制出各种口味的麻辣系列菜肴,不仅使麻辣川菜香飘全国,而且落户世界各地。川菜的成功经验说明,在传统菜系的烹制上不能一味地固守传统,只有在菜的滋味、口感上不断创新,其菜系才会不断地发展壮大,更好地传承下去,实现做大做强。

Abstract:The chefs of Sichuan cuisine emphasizes on the innovation of the flavor development. Skilful use are made of spicy flavor to develop Sichuan cuisine of various flavors, which become popular both at home and abroad, rising from the bottom to the top of the four major cuisines in China. The success of Sichuan cuisine shows that instead of blindly adhering to the traditional custom of cooking traditional cuisines, efforts should be made on the innovation of the cuisines in flavor and tastes. Only in this way can the cuisines be constantly developed and better inherited.
