| 摘 要： | 宁波名菜具有鲜明的特色。文章通过对宁波名菜的品种类型、刀工成形、烹调方法、滋味类型、色彩、质感等六个方面进行定量分析,得出宁波名菜的总体特点,从而对宁波名菜有更加清晰的认识。
