白肋烟不同部位叶挥发性香味物质组分及其差异

摘    要:采用同时蒸馏萃取和顶空分离前处理方法及气相色谱-质谱联用分析技术,研究了白肋烟不同部位叶挥发性香味物质成分及含量的差异.结果表明:在检出82种成分中,共有成分77种,异有成分5种,成分和含量酮类〉醛类〉醇类〉氮杂环类〉其它类〉酯类〉酚类.不同部位间有明显差异,成分和含量均为上部叶〉中部叶〉下部叶.类胡萝卜素类、西柏烷类及苯丙氨酸降解及转化的产物占总含量的57.81%-74.06%,其中前二者的含量是中部叶〉上部叶〉下部叶,后者又是上部叶〉中部叶〉下部叶.11种含量较高的重要香味物质的总量中部叶〉下部叶〉上部叶.综合结果分析,下部叶香气特征不及中、上部叶,中部叶香气品质要比上部叶好.

Abstract:Headspace solid-phase micro-extraction (HS-SPME) and GC-MS were applied to analyze aromatic substances of burley tobacco leaves in different positions in the experiment. The results showed that there were 82 kinds of the aromatic substances determined in burley tobacco, and 77 kinds of the aromatic substances were common components, 5 kinds of the aromatic substances were different components. The ingredient and the content were ketones 〉 aldehydes 〉 alcohol 〉 heterocyclic nitrogen compounds 〉 others 〉 esters 〉 phenolics. Between the different positions there were obvious differences, the content of aromatic substances were upper leaf 〉 cutters 〉 lower leaf. The contents of carotenes, cembrane, phenylalanine and their degraded substances were 57. 81% -74. 06% of entire aromatic substances. The contents of carotene and cembrane and their degraded substances were cutters 〉 upper leaf 〉 lower leaf, the contents of phenylalanine and its degraded substance was upper leaf 〉 cutters 〉 lower leaf. The entire of 11 kinds of very important aromatic substances were cutters 〉 lower leaf 〉 upper leaf. In a conclusion, the aroma characteristic of the cutters leaf was the best, the upper leaf was the second, and the lower leaf was the worst.
