| 摘 要： | 《齐民要术》不但是一部重要的农业科技文献,也是农产品加工发展史上一部里程碑式的著作,在其之前及其后的历朝历代都没有出现过象《齐民要术》这样详细讨论农产品加工的大型农书。对其中的肉食加工状况进行了梳爬整理,对肉食的原辅材料、加工方法进行了分析与讨论,使我们对魏晋南北朝时期的相关情况有所了解,并对现今仍值得利用的方法与材料提出了意见与建议。

| Abstract: | Qi Min Yao Shu is not only an important literature of agricultural science, but also a work of milestone in development history of agricultural products processing, for no books ever discussing thoroughly the processing as Qi Min Yao Shu does. With sorting out meat processing status, analysing and discussing raw and auxiliary materials and processing method of meat, this paper lets us know about relevant situation of the period from Wei Dynasty, Jin Dynasty to Northern and Southern Dynasty, and also gives some ideas and suggestions to the method and material valuable till now. |
