摘    要:研究了南果梨经保鲜纸包装后冷藏时果皮和果肉的蛋白质含量及多酚乳化酶同工酶的变化.结果表明:南果梨在冷藏中,果皮的蛋白质含量始终高于果肉,果皮的蛋白质含量至下降趋势;2月份多酚乳化酶同工酶谱带共有六条,其Rf值分别为:0.032,0.063,0.094,0.212,0.263,0.425,果肉的多酚乳化酶同工酶谱带明显少于果皮,保鲜纸处理后的南果梨在贮减时果皮多酚乳化酶同工酶谱带少于对照.

Abstract:Changes of bands of polyphonoloxidase(ppo) and contents of protein in peel and flesh of Nanguo Pear packaged with freshness protection paper on its cooling storage are studied. The results show: the content of protein in peel is always higher than that in flesh, and the content of protein inclines to decrease during storage of Nanguo Pear. Six bands of the ppo isozyme are expressed, and Rf respectively: 0.032,0.063,0.094,0.212,0.263,0.425.The ppo isozyme bands of the flesh are obviously fewer than those in the peel.The ppo isozyme bands of peel in Nanguo Pear packaged with freshness protection paper on storage are fewer than those of control group.
