| 摘 要： | 用冻结-融解辅助水溶液浸提法，从玫瑰鲜花中提取天然红色素，促进细胞内可溶物质的渗出，缩短了浸提时间，提高了浸提率。确定的提取工艺条件是：50℃、60min、浸提2次，提取率可达8．65％。

| Abstract: | The red pigment was extracted from rose by freezing-thawing assisted water soaking method, which promoted the leakage of intracelMar solutes, reduced extraction time and increased the extraction rate. The determined conditions of extraction process were, 50 ℃, 60min, 2 times and the extraction rate was 8.65 %. |
