摘    要:通过对芡实的产业发展状况、营养及保健功能、加工脱壳和保鲜技术以及产品深加工技术的综述,分析和讨论了芡实脱壳加工、保鲜技术及产品深加工过程中出现的问题,并提出了相应的解决措施.

Abstract:It reviewed the industrial development situation, the nutrition and health function, the processing and preservation technologies and the shell products deep-processing technology of Euryale Ferox. Then it analyzed the problem arised in the course of Euryale shell processing, preservation technology and products deep-processing, and put forward a series of remedial measures.
