| 摘 要： | 抗菌物质是具有抗菌作用的活性物质．近年来，开发抗菌性强、安全无毒和性能稳定的天然食品防腐剂巳成为食品科学研究的一个热点．随着研究的深入，被揭示的天然抗菌物质越来越多．本文从抗菌物质的各种来源和应用讨论抗菌物质近年来的研究进展。
