摘    要:烹饪与营养教育专业学科建设需解决师资力量薄弱、烹饪教学设备设施建设和教材建设不完善两方面的问题。应依托食品学科基础研究,围绕烹饪文化研究、烹饪工艺研究、烹饪营养研究三个方向进行学科建设。

Abstract:cooking and nutrition education speciality' s discipline building need to solve two problems:teacher-weakness,the imperfect of cooking facilities,teaching equipment and textbooks.Relying on basic research of food discipline,we should focus on three directions such as cooking cultural research,cooking techniques research,cooking nutrition research.
