| 摘 要： | 红曲霉含有红曲色素、抑菌物质、酶类、HMG—CoA还原酶、降血压物质、麦角固醇、桔霉素等生理活性物质，红曲色素是其主要的活性物质。本文较全面的介绍了各种活性物质特别是红曲色素的研究进展，提出了红曲色素的研发建议。

| Abstract: | Many bioacdve substances are in the Monascus such as monascuspigment, antibacterial substances, enzymes, HMG-CoA reductase, andhypertensive substances,ergosterol and citrinin. Monascus pigment is the major antibacterial substances. In the article, the research advancements of hioactive substances are elaborated. And the suggestions on Monascus pigment are put forward. |
