栀子蓝色素呈色机理的探讨及二步法工艺的研究

摘    要:本文采用微生物发酵和酶促反应分开的方法(二步法)制得色泽鲜艳的栀子蓝色素.结果表明,栀子果粉中与栀子甙共存的a一藏花素是影响色素色泽的主要因素之一.用一种大网孔非极性吸附树脂对栀于果粉水浸液进行过柱吸附,不仅可以将栀子甙与藏花素分离,而且还可以得到较纯的栀子黄色素(a一藏花素).氨基酸的种类对二步法形成色素的色泽影响甚大,其中亮氨酸、精氨酸、苯丙氨酸所形成色素的色泽最佳,呈美丽蓝色.

Abstract:: This paper reports a method of producing brilliant gardenia blue. The results indicatedthat crocin of gardenia fruits is a main effect on color of pigment formed. For this reason, purecrocin (gardenia yellow) was obtained and geniposide was purified by using a reves - phasecolomn chromatog. Moreover, the effect of different aminoacids on blue pigment formation wasstadied. Pigment formed from leu, phe and Arg appears brilliart sky-blue.
