Fe^3+、Fe^2+离子对叶绿素的稳定性影响研究

摘    要:叶绿素铁钠盐与叶绿素亚铁钠盐在生产制备中易受皂化溶液的PH值、温度、时间,铁代处理时间,离子浓度等的影响。因此,我们对皂化和铁代条件进行筛选并对色素的稳定性进行了研究。结果表明,用5%NaOH溶液,在60℃加热60min皂化完全,Fe^3+离子在酸化PH为3.0,铁代温度为60℃,铁代时间为60min,Fe^3+离子浓度为0.4mol/L时铁代最完全。Fe^3+离子在酸化PH为4.0,铁代温度为40℃,铁代时间为40min,Fe^3+离子浓度为0.5mol/L时铁代最完全。所得叶绿素铁钠盐与叶绿素亚铁钠盐在PH值为3-6时稳定性较好,对室内光、热稳定性好。

Abstract:In the production and preparation process, sodium salt of chlorophyll and chlorophyll ferrous iron are easily influenced by saponification solution PH value, temperature, time, the processing time replaced by iron, ion concentration and so on Therefore, the replaced conditions of saponification and iron should be screened for the stability of the pigment were studied The results show that with 5% NaOH solution, heated at 60℃ full 60min saponification, Fe^3+ ions in the acidification of PH 3.0, iron-generation temperature of 60℃, iron - replacing time for 60mins, Fe^3+ ion concentration of 0.4mol / L, iron replace is the most complete, and when the iron Fe^2+ ions in the acid PH of 4.0, iron - generation temperature is 40℃, iron - replacing time is 40min, Fe^2+ ion concentration of 0.5mol / L on behalf of most complete. Sodium salt derived from chlorophyll and chlorophyll ferrous iron in the PH value of sodium for the stability of 3 to 6 pm is better for indoor light, heat stability.
