摘    要:窖池是浓香型大曲酒生产企业最重要的设备,本文阐述了窖池养护的重要性,分析了窖池养护的必要性和生物学基础,提出了窖池养护的原则,探讨了窖池养护的措施.

Abstract:Cellars are the most important equipment to an enterprise producing aromatic yeast wine. The thesis expounds the importance of the cellrs maintenance, analyzes the necessity and the biological foundation, puts forward the principle of the cellars maintenance, and probes into the measures of maintaining the cellars.
