蔗糖在固液两相间转移的研究

摘    要:根据蔗糖的旋光性,用旋光仪测定了冰棒熔化过程中固相和液相的蔗糖浓度,结果表明:当冰棒在30℃熔化时,液相蔗糖的浓度远高于固相中蔗糖的浓度,冷冻前向蔗糖溶液中加入少量乙酸乙酯等物质可抑制蔗糖在熔化过程中在液相的富集.

Abstract:According to the relationship between concentration and optical rotation, the concentration of sucrose in soled phase and liquid phase was determined in the fusion process of water-ice. The results show that the concertraion of sucrose in liquid phase is far higher than that of solid phase. Adding some substances to water-ice, the transfertion of sucros from solid phase to liquid phase can be inhibited in water-ice fusionprocess.
